Do yourself a favor and set aside some lemmons or lemmon juice and a sponge to "cure" the carvings as you go along just as you would with apples. The oxidization will lessen dramatically and you will need to go back over everything when you are done.
Then have some Vaseline handy to "seal & shellac" your work (it is an art form). I wring out the same sponge and gently go over the gourd and absorbing the natural fluid that emits from the meat. If left in a cool & dry place (or refrigerated) it will last for a couple of weeks. These aren't the most creative ones. I've seen group pumpkins, massacre pumpkins, the vomitting pumpkin, the cannibal pumpkin (tiny gourd in its grin), and the pumpkin that is clearly scared of the candle within. It is advisable to re-do this when you notice any deterioration. It also depends on the quality of the Pumpkin itself as it is a live item.
